Abstract

The objective of this degree work is to make a record of the culinary traditions of the Chunchi canton as Intangible Cultural Heritage, to obtain information a survey and interview was used, applied to the study group of the Chunchi canton, which allowed to document the customs, culinary traditions, drinks and typical and traditional dishes, in addition to the main ingredients and preparations, obtaining the following results in the survey: 64,3% of the inhabitants know the meaning of the typical and traditional dish and 35,7% are unaware of the meaning of these two terms; On the other hand 90% know the ingredients of the drinks and 2,8% have no knowledge; 100% agree with the implementation of a gastronomic magazine within the canton. To conclude this research work, customs, traditions and typical and traditional gastronomy were documented through a magazine such as Intangible Cultural Heritage, in which the methods and techniques of preparation of the gastronomic dishes, with this, is intended to rescue and conserve the culinary traditions maintained by the ancestors. The gastronomy of Chunchi, apart from being varied, is rich in proteins, mineral, vitamins, and others for being products with a high nutritional content, produced in their localities. This is an added value that makes its existence a highly attractive factor to disseminate and document it with its customs and traditions. Researchers should be encouraged to the development of the specialized material in the Canton so that the attractions and gastronomy existing can be made known, being this necessary to improve the influx of tourists and therefore to make known the culinary traditions of the place.
