Valoración comparativa de mieles de abeja de la Asociación de Producción Apícola de Chimborazo con mieles existentes en el mercado según norma NTE INEN 1572.

Abstract

The objective of the following investigation is to compare the honeys of the ASOPROACH with those of other markets, using the physicochemical and microbiological analysis in the periods from June to August, 2017 and January to March, 2018. These comparisons were carried out based on the norm NTE INEN 1572. These assessments helped to visualize the differences between the honeys in the market and allowed ASOPROACH to check its concerns about the quality safety of its honeys and provided some possibilities to improve the marketplace positioning of the branch in the market. I order to do the respective analysis, twelve samples were taken from ASOPROACH, as well as, some other twelve samples from different honey stores. The honeys were compared taking into account aspects like: deterioration, adulteration and contamination. After that, the results were socialized, some training courses based on the results obtained were taught and the beekeepers that were part of the investigation were awarded with certificates. The analytical determinations used to detect anomalies, inaccurate heat manipulations and coolness were: hydroxymethylfurfural and the diastase number. The results obtained showed that the honeys from the ASOPROACH fulfilled these parameters. On the other hand, the honeys from the other markets didn’t fulfil the diastase number and five of them weren’t within the hydroxymethylfurfural parameters. It was concluded that, in general the honeys that belong to the ASOPROACH in comparison with those of the market, fulfil the quality norm NTE INEN 1572. However, taking into account the diastase number, some honeys that come from the market don’t have an enzyme. It is recommended to for the beekeepers to have a better control when they are extracting the honey.
