Diseño de un Manual de Seguridad Industrial en el Centro de Faenamiento Animal "Rancho Monterrey"

Abstract

In the animal center "Rancho Monterrey", located in the Mocha canton, the design of an industrial safety manual was carried out, it was considered as an experimental unit for each sample of the quality of the work enviroment, taken in the areas of the process. The physical hazards that were identified in the workstations indicate that the eviscerator and channel splitter are exposed to a higher noise level (95.78 and 90.80 db) and humidity (66 and 68%), even exceeding the norm, whereas the post of puntillero indicates the less illumination (194,0 lux), without complying with the labor legislation. The total microorganism count in the water, after the application of the disinfectant, decreases the microbial load of total and fecal coliforms, since it reduces to 69 CFU / g, decreases to 17 CFU / g, and feces of 50 CFU / g , a 12 CFU, without complying with the regulations. The disinfectant used is effective against the strains of microorganisms tested in the evaluated time and the tested concentration (4% diluted); since the efficiency was 76.40% for fecal coliforms and 75.60%; for totals. The safety manual was delineated and proposed, for which we proceeded to socialize with the workers about the security measures to be implemented within their job in each of the tasks entrusted, in addition to socializing, with the management the advantages of Implement preventive and corrective measures to avoid risks in the slaughter center.
