Elaboración de un manual de buenas prácticas de faenamiento para la línea de ovinos del Camal Ecológico del canton Colta

Abstract

The current national regulation in Ecuador has compelled to Municipal slaughterhouse of Colta canton to define processes guaranteeing to get high-hygienic-quality meat. Based on these background, in this present paper a Manual of Good Manners of Slaughtering of Ovine was made of for this institution. Data were gotten through initial and final phases of this investigation assisted by a checklist based on the Procedure Manual for Inspection and Qualification of slaughterhouse emitted by AGROCALIDAD. Descriptive statistics and the chi-square test (comparison test) were used taking into account pre and post Manual as sources of variation. It was evidenced that the nine categories composed of 108 verifiable articles have improved 88.08% of fulfillment level was gotten whit this manual and 52.72% without it. That means that there are meaningful differences as follows: x2cal of 30.98 higher than x2tab(p<0.01) of 6.63 and whit a certainty higher than 99%. It is concluded that there is a relationship between "The Current National Regulation fulfillment condition and the Elaboration of Manual of Good Manners of Slaughtering", so it is recommended to make a Hazard Analysis and Critical Control Point (HACCP) in the slaughtering process of livestock as a requirement to get an international quality certification.
