Diseño e implementación de un manual de buenas prácticas de ordeño (BPO) para la Hacienda la Rinconada

Abstract

In the Rinconada estate located in the province of Cotopaxi, Lasso canton was designed and implemented a manual of good milking practices ordered (BPO). The research was carried from the application of a check list to identify the most vulnerable parameters. Thus the good practice were implemented in order to ensure the proper execution of the command in addition to manual validation by microbiological assements. The project had no experimental treatments but its results responded to a completely randomized design. The previous collected data of 40,54% compliance and subsequent data were 95,72% of goog milking practices, they were recorded through the check list, they were performed using t-student statistical test with the resulting values that allowed the evidence that its application caused significant changes. These results are supported by microbiological laboratory analysis, statistically analyzed by chi – square method. These samples were taken at the level of living surfaces, inert surface and milk, with them was shown that after execution of (BPO) milk is suitable for consumption to comply with parameters established in COVENIN 903-93 standards and NOM-243-SSA1-2010.

For this reason it is recommended to continue the training program for the implementation of (BPO) to achieve 100% compliance.
