Plan de salvaguardia del patrimonio cultural inmaterial, ámbito: patrimonio alimentario y gastronómico de la elaboración artesanal de las cholas de Guano

Abstract

This research was developed with the purpose of developing the plan for safeguarding intangible cultural heritage, scope: food and gastronomic heritage of the artisanal production of Las Cholas de Guano, which was developed through analytical, descriptive, and field methods. The research was developed in five stages: for the first, field information was gathered through interviews and a bibliographic review that served as a basis for generating synthetic indexes on the cultural management of the canton; for the second, a historical-anthropological analysis was carried out through a bibliographic review of secondary information on the history of baking and La Chola de Guano as an emblem for the people from Guano; for the third, the 12 manifestations of the Intangible Cultural Heritage (PCI), 19 tools and 12 ingredients linked to La Chola were recorded; in the fourth stage, for these previously recorded manifestations, their state of vulnerability was determined; and finally, for the fifth stage, based on an analysis of the information recovered in the previous stages, the analytical, philosophical and strategic moments were developed that allowed to identify the strengths, opportunities, weaknesses and threats, the vision, mission and strategic objectives that would be the basis for establishing 5 programs and 16 projects focused on the research, transmission, conservation, dissemination and social use of the cultural heritage linked to La Chola. The budget for each project was calculated, with a total of $122,820.88 for the safeguarding plan. In conclusion, this work aims to raise awareness of the importance of the cultural heritage linked to La Chola de Guano to keep this heritage alive and it is recommended taking the appropriate actions to comply with the proposed programs and projects.
