Sistematización de la información técnico-científica sobre deshidratación y liofilización en frutas en las universidades del Ecuador.

Abstract

The objective of this research project was to systematize the technical-scientific information about the dehydration and freeze-drying of fruits from the degree works of the universities of Ecuador. The study was a non-experimental documentary study. A qualitative methodology focused on the relevance of the degree works, and a quantitative methodology determined the number of works on the topic of study. They were classified according to the year of publication, the university, and the career to which the research belonged. A theoretical descriptive analysis was performed following four steps, which were: exploration, classification, processing, and analysis of university repository files from 2015 to 2022. A list of universities in the country that offer careers in agribusiness, food, chemistry, and related fields was created. Then, with the Microsoft Office software Word tool, the information about the degree works was collected and then systematized using the Access tool of the same software, filling in the fields of code, subject, link, authors, university, keyword, and summary. Finally, descriptive statistics were used to classify the papers according to the year of publication, university, and degree program to which they belonged. Thirty-three-degree works were found in the period described in which 2021 stood out with nine works, the Agrarian University of Ecuador with five works, and the careers of Food Engineering and Agroindustrial Engineering with 11 and 10 works, respectively.
