Estructuración de un plan sanitario para implementarse en las ganaderías proveedoras de leche de la empresa “productos lácteos Maribella”.

Abstract

The objective of this research was to structure a Health Plan to be implemented in the dairy farms of the company “Productos Lácteos Maribella” located in the Province of Cotopaxi. A survey was prepared for 55 raw milk suppliers of the company in order to get real and first-rate information regarding the quality of milk. Eleven questions were related to the animal health issue, 8 to the milking management and 6 to the commercialization. In addition, by means of field and laboratory techniques and physicochemical analyzes, organoleptic tests, alcohol test, density, temperature and titratable acidity test were carried out in order to check the quality of the milk offered to the company, trying to cover the problem of handling and transportation of the raw material. According to the data obtained in the survey, all the producers do not comply with the standards established by the Ministry of Agriculture and Livestock on food safety. The 180 tests analyzed presented a pleasant smell, creamy white color and a good appearance, complying with the current regulations established by the Ecuadorian Standardization Service. The density was 1.027 g / ml at 15.72 ° C, not complying with the regulations. Titratable acidity meets the established standard of 14.58 ° D. The lack of training programs regarding: parameters of quality, marketing and final payment per liter of milk generate insecurity and dissatisfaction of the suppliers as well as conflicts with the company when this rejects the product. The application of the proposed Sanitary Plan will allow the by the suppliers optimizing the production levels, the quality of the product offered and obtaining a fair and steady price.
